When I visited Jaipur in 2013, I got a taste of the city’s famous snack — pyaaz ki kachoris. Even though I am not a kachori person at all, I simply loved the taste.
Few months later my sis-in-law was in the Pink City on a work trip and she got these kachoris parcelled for us to devour. And devour I did.
Eating is one thing and cooking another. Kachori is all about texture – that khasta feel—and you have to knead the dough right and fry it at proper temperature to get it. Also the filling is full of amazing spices that need to be employed in balance for flawless flavor.
Bottom-line: Intimidating recipe, also the new theme of this food meme. Modesty aside, I fared so well on this one that my mom said I shall soon be rewarded for my efforts. Win-win!
