My Experiments with Food: Methi theplas

Not too far away from my place, there’s a Gujarati snack store which sells the most amazing theplas on earth. Whenever I get a packet, I finish all of it in no less than 10 minutes.

As you must have already guessed, I tried theplas this time. They’re quite simple to make. All you need is a cup of wheat flour, half a cup gram flour, one cup curd, half a cup of fresh, finely chopped methi leaves…knead a medium texture dough once you’ve seasoned it with salt, red chilli powder, turmeric powder, cumin seeds and coriander powder. Allow the dough to settle down for 10 minutes. Make several round balls out of the dough, roll them into tiny discs and toss them on a tava with as much oil/ghee you prefer till it’s mildly crisp and brown.

Theplas are especially great if you’re traveling coz they don’t go bad too soon. Modesty schmodesty, the ones I prepared turned out superb. How does it go…saru che?
